weighing in

I've been on Weight Watchers since August 15, 2011 and have been slowly losing weight.  Once I reach my goal weight I am going to post a series of photos I've take while on this journey, but today I'm posting a picture taken of me yesterday before going to a friends wedding.  To date I have lost 28.6 pounds and want to lose 10 more. 

When I look at these pictures I can really see the transformation I'm going through.  I also love the dress I'm wearing.  I purchased it a t JC Pennys and love how it shows off my slimmer body.

boho sheik

I found this outfit in the Alloy catalog that comes to my house and instantly fell in love with it.  It's very Boho Sheik.  It reminded me of something I wore when I was little.  The flowy top with the bell-bottom style jeans and the many bracelets.  This is definitely something I will try to re-do myself.

something blue

I guess I've been having the blues this week.  First the toes and now this outfit.  I wore something similar yesterday to two birthdays that me, my hubby and son went to.  The only differences were that I wore a black t-shirt, black belt, my shoes were flats and I had a black bag.  I also included a flower that I put in my hair which I pulled to the side.  It like how it turned out.  My look was so much more afforadable than this high-end look.  The jeans, bag and t-shirt I had. My accessories were around $30 and my sandles $13.  This outfit I found on Polyvore.

irish potatoes

So tonight I made Irish potatoes for the first time.  I always thought they were gross tasting, but the recipe I used omitted coconut, so they're actually very yummy.  So for all my Irish fans out there and for my husband who is part Irish, I give you my Irish potatoes and thank you to my friend Jackie Conahey for sharing this yummy recipe! 


Irish Potatoes:

1/4 cup boiling water
1/4 cup milk
6 Tbs. instant mashed potatoes
2 Tbs softened butter
Few grains of salt
1 tsp. of vanilla
6 cups of confectioner's sugar ( you may need more to stiffen up the dough)
Cinnamon
Shredded coconut, if desired

1. Whisk water, milk and instant potatoes together.
2. Whisk in softened butter, salt and vanilla.
3. Gradually work in confectioner's sugar.  Stir until thick. 
4. Kneed in all the sugar until the mixture is no longer sticky.  (This is where you may need some extra sugar)
5. Add coconut if desired.
6. Roll into small balls.  Place in plastic bag with cinnamon and gently shake to coat. 
7. Set on a waxed cookie sheet to firm up some more then store in an air-tight container to assure freshness.

feeling blue

So this morning I woke up earlier than usual for a few reasons.  I can get a lot done in a quiet house and I can get a lot done in a quiet house.  LOL!  Anyway, I knew today was going to be a beautiful day in South Jersey, and so I decided to wear sandals.  There's just one problem with that, my toes were not ready to be viewed.  Solution - clean them up and polish them.  I love the blue color, but the best part to my feeling blue ... which I'm really not, is that I saved myself around $30. 



It's amazing how the cost of everything is going up and my paycheck is getting smaller thanks to our wonderful goverment.  But I'm not going to surrender.  My husband and I are constantly looking for ways to save.  I just purchased the supplies to make my own detergent and we've replaced all the lights in our house with the cost effective ones.  Last month our electric bill was $65.  Sweet right?  Now the bulbs were expensive, but the long term savings outlook is worth the cost.

mint chcoclate chip ice cream pie


This is the delicious dessert that I made my husband for his birthday.  It's Mint Chocolate Chip Ice Cream Pie in an Oreo crust.  Yummy and easy to make.

Use a food processor and pulverize 25 Oreo cookies.  Then add 5 Tbs. of melted butter and combine.  Form your pie crust by pressing the mixture up the sides and then around the bottom of a lightly greased pie plate.  Finish by scooping slightly softened Mint Chocolate Chip ice cream.  Spread evenly and then put in your ice box (freezer) for 2 to 3 hours.  Garnish with Oreo's or other toppings, slice and enjoy!
